Marshmallow Rice Crispy Squares

These are too easy to make. At the grocery store, the brand name pre-made individually packaged ones are over $1 per square. That’s outrageous since you can make them super quick for 1/4 that cost. Plus homemade tastes better.

Ingredients:

  • 1/4c butter
  • 4c mini marshmallows (or any size chopped if you can’t find minis)
  • 5c rice crispy cereal
  • OPTIONAL: food dye, chopped small pieces of candy cane, chocolate chips, more marshmallows, shredded coconut, gummies, chia seeds, other candies, dried fruit pieces, or whatever you like.

Instructions:

  1. Melt butter in a medium to large pot (big enough to hold and mix all ingredients) on medium-low heat.
  2. Once butter is melted, add marshmallows. Stir continuously until marshmallows are melted, scraping the bottom of the pot to avoid sticking and burning. Reduce heat to low if you find marshmallows are getting burnt on the bottom of the pan.
  3. Once marshmallows are melted, add rice crispy cereal one or two cups at a time. Mixing well each time until mixture is fully incorporated.
  4. OPTIONAL: mix additions in as you’re mixing the rice crispy cereal. ALTERNATIVE: You can also sprinkle the additions on top after you’ve spread the mixture onto parchment paper while it’s still warm and press them into the tops of the crispy treats.
  5. Spread mixture onto parchment paper into any shape or thickness you like. I usually do rectangular, about 1″ to 1.5” inches thick.
  6. Let cool. Cut into squares or any desired shape with a knife or cookie cutter. Can be stored in an air tight container or frozen to be enjoyed later.
